Dependency updates

Recently #57 was merged which addressed the most critical security warnings. However, it might be beneficial to just update all remaining dependencies so everything is on the latest version?

Is this desirable?

Yes, this would be a welcomed PR!

We could also upgrade the version of golang we're on as well

just updated all of the deps in this PR https://github.com/noqcks/gucci/pull/68

and bumped us to golang v1.23
