How do I uninstall this from Ubuntu. There's nothing in the docs.

Not an expert on the matter, but run:

maintenancetool
where you installed it. It will give you a wizard with the option to "Remove all components". - There might also be some leftover/temporary files in
~/.cache
,~/.config
and~/.local/share
.
(Of course also the models, wherever you downloaded them.)
I'd say this has been answered sufficiently.
I tried that and it didnt work it still remebers my settings on reinstall... I have a broken file somewhere in my localdocs setup so it would just keep crashing regardless of how many times I reinstall

You can completely purge the configuration by deleting ~/.config/nomic.ai, ~/.cache/nomic.ai, and ~/.local/share/nomic.ai. Warning: your downloaded models may be in one of those folders (cache, IIRC?)
I solved the issue that made me want to reinstall. it is still an issue that there is no way to get a full uinstall from the app itself. there isnt really a way to know this is how you uninstall you just need to guess ur way into it.
after running maintenancetool i still had to run the following
rm -rf ~/.config/nomic.ai
rm -rf ~/.local/share/nomic.ai/GPT4All/
