Extending the Email Builder
Here is an example from Caldera Forms.

Having a way to add fields into perhaps tinymce toolbar or a table block, or another way to make it visual would help. As one would add styling and group/space between various sections of the form.

An example would be to use a kind of paragraph block and add the Field Data values to it. As one would be able to style the text and also decide on which line the various field data would be placed.
There is a technical difficulty with this. I tried to use the "TinyMCE" component for the email template box. But it seems like the TinyMCE included in Gutenberg doesn't have the Table plugin included. 🙁 https://www.tiny.cloud/docs/plugins/table/
I need to explore further how this can be enabled in the TinyMCE component. As that is needed to let users create a basic layout for the email as you showed.
