There should be a way in the app to define custom layouts.

This may (or may not) be a subset of this layout editor functionality but for me it would have been simpler to change the keyboard icon that is used to switch between languages, to instead show the iso code of the next-in-line language that will be switched to.
And I would suggest changing some terms in the UI for better clarity & enhanced ease of adoption: "Letter layouts" to "Languages" "Enabled Layers" to "Layouts"
Finally, once some of these basic feature enhancements are made, it may also be nice to offer users a (skippable) video tutorial for onboarding.
