to build and run any of the ofxGRT examples, cd to an example folder and run: cd ofxGrt/example_timeseries_plot make make run

If you do want to use xcode, you can also use the project generator to create an xcode project. http://openframeworks.cc/learning/01_basics/create_a_new_project/
