feat: add auth to kibana

Is your feature request related to a problem? Please describe. We need to add authentication to our elastic stack in order to enable it to be served via either the VirtualServer or Gateway API. It is currently unauthenticated.

Describe the solution you'd like We should just be able to plumb in password generation and set it as part of the init of the pod. https://www.elastic.co/what-is/elastic-stack-security

Note - we may want to enable TLS and gen some certs here as well, but this is a question for down the road.
