Tracking UCAN-delegated upload metrics

We want to make sure we have visibility into the end-users uploading via UCANs. Would be great to confirm we can track / track if we're not:

Number of UCAN tokens used for uploads, and the number of uploads (over time)
Number of UCAN-authorized uploads by root NFT.Storage user that authorized these uploads (over time)
Ideally: Raw data with UCAN uploads (UCAN token column + associated root NFT.Storage user in uploads table)
