Black text on black background - default for all users

When any of my users create a document, they get black text on a black background by default, in all templates. (Some templates have nice patches of white boxes and black text that are visible, but the rest is as described)

Am I doing something wrong? Do I need to disable dark mode globally? I see there is a dark mode feature checked in, so I assume it should be supporting dark mode?

Thanks for help, sorry if I am in the wrong place for this, but I have not been able to find anything on the forums or other various googling.

I'm using NextCloud AIO Collabora Online Development Edition 24.04.12.4 c177c64c3d

Please add if you are talking about NC built-in templates, for which manual explains how to refresh, or own templates, in whcih case you need to set font to Automatic.

OOTB templates - apologies, i will check manual

Edit: if you could point me to the section of the manual for how to refresh templates I'd be most grateful, as I can't seem to find it

I guess this should be raised as an issue on Nexcloud AIO? I have an out of box installation, only change has been standard AIO container updates which recently started using dark mode where it detected the user's OS UX was using dark mode
