Replace 'elasticsearch' with 'open search'

Amazon renamed 'ElasticSearch' to 'OpenSearch Service'. Trying to update docs for this. There are still likely some 'elasticsearch' wordings in the codebase (event names, configs) but not entirely sure what's changed, will need more input.
