PHP 5.6 is End-of-life

I just stumbled over the fact that the images still contain PHP 5.6. PHP 5.6 is EOL since the end of 2018, so you might want to remove it.

switching the default runtime to 7.2 would be a breaking change for existing builds, so we are hesitating. would still be a good move imho
