The informations regarding the possible configuration values are mostly already present in the schema files used for validation. That information could be used to autogenerate the reference for the configuration options.

Before this is possible the schema validation has to be improved to suppport custom complex types. Only with that it will be possible to create meaningful documentation. Currently it would be documented as a single very large array structure without any further internal structure.
