[ENH] - Include emails in `qhub-users-import.json` when upgrading

Feature description

As discussed in issue #1197, when upgrading from v0.3.14 to v0.4.0 or greater, it would be a lot more convenient if the email was captured in the email field. See this comment.

This might only be relevant for those using Auth0.
