I currently have an active discourse instance at https://transtalk.eu which has quite a few plugins installed as well like End to End encrypted messages and etc I also mentioned discourse yesterday in IRC/Discord though I don't see the purpose here.

Also to keep in mind since you are running a social platform at that point you need to comply with GDPR and the Cookie Banner stuff there are plugins that help which I use but obviously you also need to add it into the privacy policy

I thought I had seen this come up somewhere. I was thinking about this because I almost wouldn't have quit social media again if core Mastodon had local-only posting, because I could probably manage, cognitively, just interacting with other omg.lol members. Discourse would be one way to enable convo within/restricted to the community.
