Your idea:

Writing the edit information to local storage until it is written to disk will mean that in the event that a user has an error that prevents saving (e.g. expired Google credentials) then their work is not lost.

The mechanism for identifying the existence of this information and applying it has yet to be determined - possibly a pop up along the lines of "The last time you edited this document, you had changes that did not save. Would you like to see them now?"
