Does this software support extracting date from multiple types of forms?

Can you give an example of what different types of forms you plan to try InvoiceNet on? In general, yes that should be possible but I feel InvoiceNet is an overkill for such a problem. If your goal is to train a model to extract dates from any document, you'd be much better off with a simple sequence-to-sequence model that just takes in the text extracted from a document and outputs dates in this text.
