iroh 1.0 API tracking issue

We want to do a through review of the public APIs in iroh in anticipation of the iroh 1.0 release, not only for their functionality and ease of use, but also their documentation. This issue is for tracking all of the modules inside iroh (and other n0-maintained crates that iroh relies on that should also be released until a 1.0)
