v4: rename LangVariant to Dialect

@andreynering mentioned the name Dialect and it instantly feels like a better and shorter name.

It's also much clearer on its own, without needing to say LangDialect.

When we do this, we should also rename the EditorConfig flag: right now it's shell_variant, but we should name it language_dialect for consistency with the command-line flags.
