[material-ui][templates] Checkbox is barely visible when checked on the Checkout template

Steps to reproduce

Steps:

1. Visit: checkout-template
2. Click on checkbox at the bottom of shipping address as well as payment details sections

Current behavior

Checkbox at the bottom of shipping address section and payment details section when checked is barely visible as it turns dark on a dark background

Expected behavior

Checkbox should be light color (visible) when checked.

Context

This will improve user interface.

Hey there @ghpratik, thanks for opening this issue! We're in the process of redesigning all of the free Material UI templates, and the Checkout one is specifically the next in the queue → https://github.com/mui/material-ui/issues/37555. While I appreciate the PR you opened for it, @zanivan's changes on https://github.com/mui/material-ui/pull/40967 will soon overwrite it, so I'll close it for now! However, this issue will remain open until the redesign PR gets merged! Thank you again! 🙏
