I acknowledge this could be due to lack of protocol support, but I'd like the ability to add alt text to GIFs.

Pretty much the same as what happens for images, an alt text button/option for a GIF

Currently the description from Tenor is used - I will add the option to modify it

Whilst you're at it, there's no way to view the alt text in the app, you get the little gif indicator, but no alt indicator, so even if tenor did have a description, which it often doesn't, there's no indication in the feed view, you'd have to click and "zoom" to see it as a label for the gif.
