Document scripts/prepare-spanner.sh

We include instructions in the README for manually preparing a Spanner database’s schema (such as the emulator) via the raw curl commands but there’s no mention of scripts/prepare-spanner.sh which does all that for you.

I think we should document only the script and remove the curl command documentation (the script itself is a good reference for that going forward).
