[Sea of Claws] Chargen changes

Since Sea of Claws allows players to "replace" Riverfolk with Seafarers, there should be a system when rolling for random career to chose which table to roll for.

We discussed overwriting Career Stage in Sea of Claws.

There would exist replacement rolltables (as shown on page 63 of Sea of Claws) available and if player chooses to "replace riverfolk with seafarers", careers would be rolled like normal, but if for example result was 64 for High Elf, stage would replace whatever result was with Chantyman.

Unless we figure out better way...

Optional (I will probably make PR with it, because seems like a good idea):

When selecting species, show the starting stats (characteristics, Fate/Resilience points, species skills/talents etc.) in order to be able to make more informed decision easily, without having to search dozen of journals looking for differences
