Provide statistics for extraction outputs

This would apply for all SPIRES extractions, but particularly for PubMed extractions. It would be useful to know summary statistics, e.g., how many entities, how many relations, how many grounded vs. ungrounded, etc. Some of this is already included in eval code, but not part of the extract output.
