Swap out react-select for downshift

I've just added downshift as a dependency as a part of #95, and I see that it also offers primitives to help with creating selects. I think it will be worthwhile to replace react-select with this—it removes a dep, downshift has more focus on a11y, and I won't be battling against default styles. Also downshift is 😍
