The app automatically adds a full stop and a line break if I stop speaking. Is there a way of stopping this?

To change how the text is inserted (e.g. after line break), use Settings->General->Text appending mode.

To remove full stop, you can create a Rule that does this. To turn on "Rules", enable Settings->General->Show Rules. Than, go to "Rules" menu (on menu bar) and make a rule to replace '.' to empty text with regular expression.
