It would be useful if the CLI had a watch command to automatically update the .typ file when the .tex file changes.

Watch command is great. And mind that you can import mitex as a plugin and convert document in typst scripting, then typst watch works on you updating a tex file. In that way, typst-preview also update output on you typing in that tex file without having to save it to disk.
