As far as I can see only plugins from spigot are supported but not from Modrinth

There is a difference between mods and plugins and according to the README file only mods can be downloaded from MR but not plugins.

I don't quite understand what you mean with "open source datapack" because every datapack is open source as you can unzip it and see the code
