TTLs and Touch?

Hello, do you have any guidance on how to deal with expiring TTLs and TOUCHing jobs that are still being worked?

My specific use-case is kicking off data-transfer jobs that can have wildly-varying completion times. While they generally complete in the hour TTL I have set, sometimes they don't and if the data are still in fact flowing (however slowly) I'd like to be able to ask for more time.
