Consider migrating to markdown-it and katex

These are the libraries VS Code uses for Notebook and editor rendering of Markdown and LaTeX (e.g. https://github.com/microsoft/vscode-markdown-it-katex ) and are mentioned regularly across the web as being fast, lightweight, and modern packages. We may want to move to them from Marked and MathJax for consistency.
