DRAFT: notional-finance subgraph (round 1)

@this-username-is-taken @SerenityFund The main purpose of this DRAFT PR is to highlight some of the methodology and implementation challenges. Would love for you to review this section and share your thoughts with me on how to approach some of them.

Regarding QA, I'm going to do brief QA later this week and I will reach out for a lightweight QA from the messari team. The purpose of lightweight QA is to catch errors sooner and fix them before the final review. I expect certain errors to pop-up given the protocol/contract implementation style.

@ishraq8 here's the notional PR. There are a bunch of open questions (see end of the notional-finance readme document). I'm meeting @jaimehgb to discuss these but let me know your thoughts on how we should proceed.
