Change aave RWA / ARC / AMM deployment.json structure

We want these subgraphs to live as their own protocol within aave-v2-forks.

The idea is that we want to reflect what is on the FE, and we consider them separate protocols, therefore they should be represented like that in messari/subgraphs.

They have already been updated in the deployment.json and just need to be fixed in the subgraph directory.
