Update `README.md` to remove deprecated functionality

There's still some references to server-config and poll that should be removed. Probably some other things too.

-config is still referenced in README.md. Very confusing. Has it been completely replaced by -beanstalkd.address? It'd be nice to have a way to poll several servers.

It'd also be nice to make -mapping-config optional, or at least tell people that -mapping-config=/dev/null works.

@bryanlarsen ah, yes, you're right. config is wholly deprecated and has been replaced by beanstalkd.address. This is related to the requirement for Prometheus exporters to only scrape a single instance (see #4).

As for your second comment, could you perhaps open an issue that specifically addresses this? This would allow us to better track what changes we want and/or need to do. Thanks!
