Bump Superset to 2.0.2 after release

The Superset definitions needed to be updated in https://github.com/meltano/hub/pull/1169 because there were dependency conflicts in the pip_url. In the next 2.0.2 release of Superset to be released next week (2/20/23) it will be fixed without needing the extra pinned cryptography package, see comments https://github.com/meltano/hub/pull/1169#issuecomment-1430626351.

• Bump superset from 2.0.1 to 2.0.2
• Remove the cryptography pin
• Do this for both superset utilities
