upstream changes in xarray breaks tracer code?

Looks like some changes in xarray have broken sympl's tracer code (https://github.com/CliMT/climt/issues/157#issuecomment-1236326485). We will need to fix this soon or pin xarray versions. The second one is faster and more predictable, but I'm open to the first too.
