docker-compose for open-source images

Could you please explain what exactly must be changed in the docker-compose.yml to use the open-source elasticsearch and kibana images? Are the actually referenced images a paid feature? Can the open-source images be used in commercial projects? And one question about the docker-compose.yml file: why are 3 elasticsearch nodes configured into it, for redundancy?
