Try and get a bunch of the e2e tests running with cosigned

Once https://github.com/mattmoor/mink/pull/483 lands, it would be neat to try and get some of the e2e tests passing with the cosigned webhook enabled for the test namespace.

I haven't looked into it more than a little, but this seems like it would be a fun stress test of these pieces in combination.
