Clarify MathJax version

It took me a while to realise that this repo is for MathJax v2, and that MathJax-demos-node is available for MathJax v3. This PR aims to clarify this.

I couldn't even if I wanted to because I don't work for MathJax anymore and so I don't have PR review privileges.

If you need assistance to adopt MathJax v3 (or v4), I do have some availability for paid consulting - send me an email if that sounds interesting. (This is probably true for the MathJax team as well.)
