documentation Light mode

Would it be possible to get a light mode for the docs website?

Some folks with accessibility challenges may find it difficult to read the documentation.

i'm planning on sending a PR to switch out the theme after the content is up-to-date, and i'm developing a theme that supports both light and dark mode (it will follow your system/browser preferences)

Now that Mastodon itself has finally, after many years, added at least optional support for detection of a user's colour scheme requirements. It's well overdue for the documentation's accessibility to be addressed.

@trwnh did you ever start anything along the lines of light/dark mode support in docs theme? Do you have any sense of whether that's desired, would be reviewed/accepted, etc? I was going to do something similar and found this issue first.

@mjankowski there's PR #1130 but that got stalled for years as i haven't yet heard from a decision-maker on whether a new theme would be accepted
