Creation of a corresponding Docker image

This looks like a nice solution to the growing Markdown/Emoji/pandoc problem.

But it has a bunch of dependencies, that are often not present (e.g. on Windows, or in CI pipelines there's often no npm installed).

How difficult would it be to create a Docker image - possible based on pandoc/latex to include emoji_filter.js?
