Enhance documentation in readme about telemetry data

readme.md currently contains the following:

Anonymous usage data is uploaded to AWS for statistical reporting. This can be disabled.

Add more details about what metrics are hashed and sent and make the feature more prominent in the document. I'll put in a sperate issue for changing the default value but absent that change specific instruction on how to disable it should be provided.
