How to only use days, weeks, without any link to a specific day?

Is there a way that I can skip/hide/remove any time/date information? I just want to get a timeline based on days or weeks but not tied to a specific date or year.

Use-case: Create a generic project-plan that starts when it starts, but not a specific date.
