Retaining record of consent for GDPR/EU user consent policy

I am currently trying to implement ads whilst also adhering to Google's EU user consent policy. In the documentation found here, the policy states the following:

When seeking consent you must retain records of consent given by end users

My application is a standalone local app that uses a local database. How have others tackled a similar situation? My initial thought is to implement an external API to log the result of the consent shown to the user.
