I'm afraid I can't help much with traineddata issues or with what hocr text tesseract produces. You'll have to take those issues upstream.

hocr2pdf is just a node.js wrapper around tesseract AFAICS, and itext is a proprietary Java/.NET library. For it to work in gImageReader I'm afraid I currently don't see any other...
