doc: documentation updates between releases may be confusing

e.g. we recently added the ability to configure Ghidrathon using GHIDRATHON_SAVE_PATH but this hasn't been released. Users who are following the README found in the main branch, which describes this new feature, but using the latest Ghidrathon release will run into issues during installation / execution. We should consider keeping main sync'ed with the latest release and using a separate branch for each upcoming release.
