Summary
Low priority, highly opinionated
As a European user our calenders typically start with Monday so it took some getting used to clicking the second column when wanting to pick a monday :)
Currently the format of the date time picker is locked to American default
Start of day is Sunday and there are no week numbers
I havnt deep dived into which datepicker this project uses, but it looks like React Datepicker which means adding the options should be trivial

Unsure where the place to put the settings would be, as the datepicker is frontend it might just be a User Prefference? But i could also argue for the enforcement across entire project or even entire organisation
Why should this be worked on?
User Experience is important, and this is an easy low hanging fruit
Working in one system where the date picker starts on a monday and then swapping to another system where the locale is not respected can be confusing and lead to invalid dates being picked
Calendar Weeks are are a must! Could be cool that it if you input the date with cursor, you can also input the calendar week with cursor. It would be amazing if you could do +2 to mean two weeks from now.
ISO 8601 specifies that a week starts on Monday, which is what countries in Europe, most of Africa, South America, and a good part of Asia. For us, having a week starting on Sunday is very odd and we never use this system.
Having at least a way to change it as a setting would be very nice to avoid confusion.
