Mailchimp subscribe via Magento: is there a reason we are not storing the IP?

In Magento we have the IP of subscribe and there is a field for it in the API and Mailchimp. can we populate this? (and if yes: also for past orders/subscriptions)

In the same line: can we record the device they used? Iphone, desktop or browser?

In our email footer we show: privacy policy etc,link to unsubscribe. But also we show: then and then youo subscribed from there and there whit this and that PC/browser. (also gives a lot more GDPR proof when someone asks: how and where did I sign up?)

Steps to reproduce

Checkout and subscribe to newsletter

Expected result

IP is recorded in mailchimp

Actual result

IP can be seen in magento, not in mailchimp
