Replace Date, Time and DateTime types with their counterpars from gleam_time

Hey Louis! I've noticed that tom exposes custom Date, Time and DateTime types. Would it make sense to release a new major version that replaces these with their counterparts from gleam_time? I'm happy to contribute a PR if you find the idea appealing.
