Add 26.2 & 27.1, unify folder structure

This makes the folder structure work like it did for Bitcoin 0.x.y by omitting y in the new x.y versions from folder names.

Was that key update the reason why the sha256sums was failing?

It looks like v27 was signed with an expired key.
