Publishing to nixpkgs?

Hey all--

there's a few versions of livekit in nixpkgs, they're maintained by a person. Would be cool if you guys could add nix to your deployment / release process.

Would probably get a lot of usage from nix folks (like me).

I can manually override that package to have the latest, and i can make a PR, but I'm probably just going to override it for me since i might have some unanticipated maintenance burden.
