Add LOG_LEVEL envvar

Is there any particular reason the log_level cant be controlled via env ?

Most of our production containers have fixed entrypoints and are configured by files/env. It would be convenient for me if the logging level can be configured via env.

Not sure if theres a python lib for that but in my go projects i tend to automate this and simply expand all options to envs. Maybe that would be something ppl are interested here ?
