Support custom field in the access logs

What problem are you trying to solve?

We like to track requests from west to east; to do that, we are concatenating the request a requestID starting from the CDN all the way down.

it will be very helpful to have it on the proxy access logs as well.

How should the problem be solved?

Providing the ability to add custom variables, like ingress-nginx is doing here

Users can provide the log format in the configMap.
